There really is nothing quite like a home cooked burger, and the secret to it is naturally the quality of the minced beef you use in the recipe. I've traveled far and wide trying burgers and have produced a simple recipe that I believe to be the ultimate burger. As if one burger was not enough, during my experimenting in the kitchen i produced a wonderful steak & stilton burger and have included that for you as well! Hope you enjoy the recipes..

Serves 4

For the burgers..

500g Turnbull's Best Steak Mince

1 Small Red Onion

1 Tb sp dijon Mustard

1 Tb sp Worcestershire Sauce

1 Tb sp Tomato Ketchup

Salt & Pepper to season

For the relish..

5 Medium Onions

250g Sugar

300 ml Red Wine Vinegar

To make the relish: Peel your onions and cut in half. Slice the onions into 3mm thick half rings. Place the onions in a deep pan and put onto a medium heat allow the onions to soften in their own juices, stirring occasionally.

Once the onions have softened, add half the sugar and coat all the onions by gently stirring. Let the sugar gently bubble on the onions, stirring occasionally to avoid them sticking or burning. Once the onion begins to change colour add the red vine vinegar and allow the mixture to gently simmer for 20 minutes, adding a little more vinegar if required. Check regularly and stir if necessary.

After 20 minutes stir in the remainder of the sugar and allow to cook on a medium heat until the mixture thickens up. Cool as quickly as possible and store in the fridge. The mixture is suitable for putting into jars and will keep for months. As well as a burger relish it is great served with any cold meats.

For the burgers..

Place you minced beef in a mixing bowl and season well with salt and pepper. Add to the mince the red onion, dijon mustard, worcestershire sauce and the tomato ketchup. Thouroughly mix the ingredients together, pounding the beef as you mix. Pounding the meat will allow the protein in the meat to absorb the other ingredients and help the burger bind together.

Form the mixture into four burgers and allow to rest. Heat some oil in a frying pan and seal the burgers for one minute on either side then place in an oven pre-heated to 190°c for 20-25 minutes. Serve in cibatta bread with caramelised red onion relish, a slice of bacon, cheese, lettuce and tomato for the ultimate home cooked burger!
